Check out the photo of my lovely friend Kara, on page 77 of the "cuisine issue" of Tribeza magazine.  The article is about the growing specialized meat purveyor movement in our fine city and features Drew Curren of Easy Tiger, Jesse Griffiths of Dai Due (where Kara works), Ben and Bryan of Salt & Time, and Martin Kohout of Madroño Ranch.  I'm so excited to watch the progress of all these amazing artisans (anyone who's tried Salt & Time's salumi...or Dai Due's, well, ANYTHING knows that I am not exaggerating when I say they are true artisans of their craft).  I know Salt & Time is opening up a brick-and-mortar shop on the eastside by the end of the summer and hopefully Dai Due won't be too far behind them.
