I recently met with Callie Speer for an interview piece I wrote for Serious Eats. Born and bred in Austin, Speer took on a kitchen job as a teenager and took over the baking duties one day when someone else was fired. Many years and several great restaurants later, she is the pastry chef at Swift's Attic, married to fellow sugar magician Phillip Speer, and was just recently nominated by Food & Wine for The People's Best New Pastry Chef Award.
